I read the book Getting Things Done (teen edition) and started to use a Kanban board (I use Trello, it's free) to dump these thoughts on to a to-do list and it frees my mind to not have to store "all the things." It has been a really big help.
I am really enjoying your wonderful descriptions of your life as a young working mom, trying to sort and balance the needs, wants, and shoulds that are thrown your way daily. I am a grandmother now, retired from my teaching career, but I can still appreciate the feelings you express in your writing as you try to manage and juggle your responsibilities and your life, as I so clearly remember trying to do in my thirties!
